We may take it for granted that electricity flows in a wire. But why doesn't it spill out of the wire and flow through the air, or through ourselves?

The reason is that only some substances allow electricity to flow through them. They are called conductors. They include metals, but also some liquids.

Substances that don't allow electricity to flow through them are insulators.
