A simple thermometer is a liquid in a narrow tube. The warmer the liquid becomes, the more the liquid swells and the further it rises in the tube.

It may take up to a minute for the liquid level to become steady. Then you make your reading.

Most thermometers read in the Celsius scale. 100 degrees Celsius is the boiling temperature of water and 0 degrees Celsius is the freezing temperature of water.
