Many castles are now just shells with walls and no floors or ceilings. You can see where they went, however, by looking for the holes in the walls that the roof/ceiling beams fitted in to.

Another way to do it is to look for windows. Windows were for looking out, so they had to be just above the floor.

Fireplaces can be used to give the same type of clue.
