When a seed sprouts, the first thing that grows out is the root.

The end of the root has tough skin. This protects the softer root material behind it. If the ends of a root did not have a protective skin the soft root materials would be shredded as they tried to grow between the grit particles in the soil. The skin also produces a liquid which acts like oil to help the growing root tip slide between the soil particles.
